Authors of accepted abstracts are invited to prepare full manuscripts to be considered for publication in a special issue of Food Hydrocolloids accompanying the conference. The deadline of manuscript submission is 30th June 2008 and authors can follow the instructions found in the website of the journal: http://ees.elsevier.com/foodhyd/
Conference Theme
The theme of the 2008 conference is “Theoretical and Applied Aspects of Hydrocolloid Structure and Interactions with Natural Food Ingredients and Pharmaceuticals”. It constitutes an attempt to address the needs of a vibrant and “full of character” industry of the Orient by bringing together traditional and new approaches in hydrocolloid research. Thus the programme topics includes the following:
- Topic 01: Chemical, biochemical and physicochemical characterisation of hydrocolloids
- Topic 02: Conformational structures, solutions and gel behaviour in low and high solid hydrocolloid mixtures
- Topic 03: Novel hydrocolloids: microstructure and applications
- Topic 04: Progress in starches and applications
- Topic 05: Role of hydrocolloids on the interfacial behaviour and stability of emulsions / dispersions
- Topic 06: Hydrocolloids as dietary fibre: from structure to functionality and nutrition / health
- Topic 07: Food commodity applications, psychorheology and sensory evaluation
- Topic 08: Hydrocolloids as functional ingredients in food, pharmaceuticals and cosmetic industries
- Topic 09: Flavour / antioxidant interactions with the hydrocolloid matrix and implications on aroma perception / bioactivity
- Topic 10: New methodologies, high pressure applications and nanotechnology in hydrocolloids
Authors are welcome to submit single page abstracts related to the aforementioned fundamentals and applications of hydrocolloids, to be considered for oral or poster presentation. Abstracts should be submitted as either word or pdf format, following the instructions of the template found below:

The official language of the conference will be English. All abstracts and presentations should be prepared accordingly.
Authors of submitted abstracts will be contacted by the organising committee by 25 March 2008 regarding the status of acceptance. Authors of accepted abstracts will be invited to prepare full manuscripts to be reviewed and considered for publication in a special issue of Food Hydrocolloids.
